Cinnamon Apple Pancakes

After trying a few low carb pancake recipes, I was about to give up. I decided to give it ONE more shot and found a winner! I call these apple cinnamon pancakes but they also have a coconut flavor to them from the coconut flour. All the ingredients give them a nice sweetness so you don’t even miss the syrup. I could even eat this for dessert!

Makes 6 pancakes (about 3″ in diameter)

Per pancake: 98 calories, 5g fat, 8g carbs, 2g fiber, 5g protein (6g Net Carbs)

**If you want a topping for them, cut up a 1/4 of an apple into small, cubed pieces and microwave with cinnamon for 2 minutes. Scoop the hot apples on top and enjoy! (this topping will add 17 calories and 4g net carbs)




  1. Put the eggs, applesauce and agave in a food processor and pulse a few times.
  2. Add coconut flour, salt and baking soda to the food processor. Mix well. If the batter is too thick, add 1-2 tbsp of water (slightly thick is OK, you don’t want it runny like cake mix)
  3. In a pan, melt about 1/8 tsp of coconut oil over medium-low heat and pour 1/4 cup of the batter into the hot pan. Cook over medium-low heat to make sure the pancake cooks thoroughly. Once browned on the bottom, flip the pancaked and cook for an additional 1-2 minutes. Repeat with the rest of the batter, adding/melting 1/8 tsp coconut oil to the pan before each pancake.
