Easy Baked Eggs (in muffin tins!)

Not only are these eggs beautiful but they are so easy to make. You can make a big batch and have eggs in the fridge for the week or make a few for a weekend brunch. These are also great if you don’t feel like going the distance and making a frittata but want something a little more exciting than the old hard boiled egg.

You can also top with some cheese or place some ham & veggies in the bottom of the tin before cracking the egg into it. Tons of ways to mix it up!

*Note: for a quicker cooking time, you can broil the eggs but make sure to place the muffin pan low down in the oven. To broil, cook them about 6-8 minutes.

Per large egg: 70 calories, 4.5g fat, 1g carbs, 6g protein

Ingredients:

  • However many large eggs you’d like to make
  • salt & pepper

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a muffin tin with nonstick spray — if you are only making a few, and not the whole pan, just spray the cups you will use.
  3. Break one egg in each cup.
  4. Bake for 15-20 minutes, depending on how you like your eggs. I like mine mostly cooked but just a little bit runny and I cook them for 16 minutes.
  5. Using a small spatula or knife, gently remove each egg from the muffin pan.
  6. Sprinkle with salt & pepper. Enjoy!
