Egg McMuffin

After my successful experiment creating my Oopsie Roll 2.0, I obviously had to make an egg mcmuffin for breakfast! Once you have a big batch of these, there are so many things you can do with them.

I took the 2nd picture below to show how the roll stays together like real bread.

Makes 1 McMuffin

Per serving: 236 calories, 13.5g fat, 5.5g carbs, 1g fiber, 23g protein (4.5g net carbs)

  • 1 Oopsie Roll
  • 2 egg whites
  • 1/4 cup shredded reduced fat cheese, or 1 slice reduced fat cheese
  • 1 slice ham or canadian bacon (I like Jones Canadian Bacon — 20 calories per slice)
  • 1 tbsp low sugar ketchup


  1. Spray a mug or small bowl (something about the size of your oopsie roll) with nonstick spray and pour in the egg whites.
  2. Microwave for about 40 seconds, covered with a paper towel. Let it rest for about 30 seconds and then microwave again for 40 seconds — I do this because the egg white explodes if you microwave it for 80 seconds straight (for some reason a whole egg doesn’t do that though, just if it’s pure egg whites).
  3. Sprinkle your cheese on top and microwave for an additional 30 seconds.
  4. Quickly toast your oopsie roll in a toaster oven or toaster — only for about a minute.
  5. Top your roll with the egg & cheese, ham and ketchup. Enjoy!
