Zucchini Banana Bread

This bread could be a breakfast, snack or even a dessert! It also doesn’t get much easier than throwing everything in a bowl and mixing it. If you want to make it more like a dessert, you could throw in 1/2 a cup of chocolate chips (adjust calories accordingly). Enjoy!

Makes 10 servings

Per serving: 121 calories, 3g fat, 10g carbs, 2.5g fiber, 4g protein (7.5g Net Carbs)

Zucchini Banana Bread

Ingredients: 

  • 1/2 cup coconut flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2tbsp maple syrup or agave (I used maple)
  • 4 tbsp applesauce (sweetened — if using unsweetened, you might want to add a tsp of maple syrup)
  • 4 eggs, beaten
  • 1/2 tsp vanilla
  • 1 medium ripe banana, mashed
  • 1 medium zucchini, grated (about 1 cup of grated zucchini)
  • 1/2 cup chopped walnuts

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a bread pan with nonstick spray.
  3. In a large mixing bowl, mash the banana and then mix in all wet ingredients (maple syrup, applesauce, eggs, vanilla).
  4. Next, mix in your dry ingredients (coconut flour, baking soda, salt, cinnamon).
  5. Mix in the grated zucchini and walnuts and pour into your greased bread pan.
  6. Bake for 40-45 minutes or until a knife inserted comes out clean.
  7. Let cool for 3-5minutes before slicing it up. Enjoy!

    Hi, I just made this recipe with a few changes (I used 3 tbsp homemade unsweetened peach sauce, almonds instead of walnuts and I also added some raisins, cloves and cardamom) and it came out sooo delicios, I can’t believe how good it is! I swear I could eat at least the half of it right here, right now :))) So thank you for the recipe!!
