Almond Joy Bars

If you love Almond Joys, then this recipe is for you (not to mention that they are SO easy to make)!

Makes 16 servings

Per serving: 101 calories, 8g fat, 8g carbs, 1g fiber, 2g protein (7g Net Carbs)



  • 2 eggs
  • 3 tbsp agave syrup (dark)  — or Honey, whichever you prefer
  • 1.5 cup unsweetened shredded coconut
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 tbsp almond flour

Chocolate Sauce:

  • 1 tsp coconut oil
  • 1/3 cup semi-sweet or dark chocolate chips


  1. Preheat oven to 350 degrees.
  2. Spray a 9 x 9 baking dish with nonstick spray.
  3. Beat eggs in a medium bowl.
  4. Add agave, coconut, baking powder, vanilla, salt and almond flour and stir well.
  5. Pour into baking dish and bake for 18-20 minutes or until browned.
  6. In a small bowl, melt the coconut oil in the microwave (about 20 seconds). Add the chocolate chips and continue to melt — you may want to melt on defrost so you don’t burn the chocolate. Keep an eye on it because it will melt quickly.
  7. Once the bars are cool, drizzle the chocolate over the top. You can either wait for the chocolate to solidify before you eat them or eat right away!
  8. If storing them and depending on how warm it is in your kitchen, you might want to keep them in the refrigerator so the chocolate stays firm.
