Chocolate Chia Seed Pudding

Makes 4 servings

Per serving: 123 calories, 6g fat, 18g carbs, 6g fiber, 4g protein (12g Net Carbs)

Low Carb Chocolate Chia Seed Pudding


  • 1.5 cups unsweetened almond milk
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp vanilla
  • 3 tbsp agave syrup (I used dark)
  • 4 tbsp chia seeds


  1. In a blender, mix together the almond milk, cocoa powder, vanilla and agave syrup.
  2. Pour into a bowl and stir in the chia seeds.
  3. Let sit at room temperature for about 30 minutes, mixing periodically to get rid of any lumps that may form.
  4. Refrigerate overnight or until the pudding has set and the seeds have softened (6-8 hours should do the trick too if you’re making it same-day).
  5. Top with strawberries (or your favorite fruit) and enjoy! You could also top with some sugar free whip cream if you have some on hand =)
