Lemon Coconut Squares

Makes 9 servings

Per serving: 115 calories, 8g fat, 9g carbs, 1g fiber, 4g protein (8g Net Carbs)




  • 1 cup almond flour
  • 6 tbsp unsweetened shredded coconut
  • 1/4 cup unsweetened apple sauce
  • 1 tbsp agave syrup (dark)
  • 1 tbsp coconut oil
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1/4 tsp salt


  • 3 eggs, 2 egg yolks
  • 4 tbsp agave syrup (dark)
  • 3/4 cup lemon juice
  • 2 1/2 tbsp coconut flour
  • pinch of salt


  1. Preheat oven to 350.
  2. Spray a 9 × 9 baking dish with nonstick spray.
  3. Combine all crust ingredients in a food processor until all ingredients are mixed together. It will be a little bit like a cake batter consistency.
  4. Press crust evenly into the bottom of the pan and prick a few holes into the crust.
  5. Bake crust for 10-12 minutes.
  6. While crust is baking, combine all filling ingredients in a food processor until well mixed.
  7. When the crust is done cooking, remove from the oven and pour the filling evenly over the top.
  8. Bake for 15-20 minutes, or until filling is set, but still has a little jiggle.
  9. Cool completely before cutting.
