White Bean, Sun Dried Tomato & Feta Dip

Makes about 2 cups

Per 1/4 cup: 72 calories, 1.5g fat, 10g carbs, 3g fiber, 5g protein

White Bean Sun Dried Tomato & Feta Dip

Ingredients: 

  • 1 (15oz) can white beans (aka cannellini beans)
  • 1/2 cup sun dried tomatoes not packed in oil, chopped
  • 1/2 cup reduced fat crumbled feta cheese
  • 1 tbsp crushed garlic
  • 3 tbsp lemon juice
  • 1/2 tsp pepper
  • 1/4 tsp salt
  • 1/4 tsp cayenne
  • optional: water to thin it out.

Directions: 

  1. In a food processor or blender, combine all ingredients and mix until smooth. Add water if the dip is too thick for your liking.
