Blistered Shishito Peppers

I have to give a shout out to my bestie Les on this one. When I was living in NYC, these were on every menu and, if it wasn’t for her, I would have never discovered the deliciousness that is the blistered shishito pepper! I finally got the guts to attempt to cook these lil guys and they are SO easy to make. You just gotta watch out for that 1 in 10 that is SPICY!

Makes 4 servings

Per serving (1 cup): 80 calories, 7g fat, 2g carbs, 1g protein

blistered shishito peppers


  • 4 cups shishito peppers
  • 2 tbsp oil — any oil except extra virgin olive oil due to it’s lower smoking point
  • sea salt


  1. Heat oil in a skillet.
  2. Add in the peppers, stirring consistently so that each side gets blistered.
  3. Cook for about 5 minutes or until the peppers are nice and blistered.
  4. Once cooked, place onto a plate and sprinkle liberally with sea salt.
  5. Serve hot and enjoy!
